White Vadagam is another variant of the popular South Indian snack made from lentils and spices. It is similar to Chilly Vadagam in terms of preparation and ingredients, but it does not contain red chili powder or other spicy elements. Instead, White Vadagam focuses on flavors like black pepper, cumin, and other aromatic spices.
To make White Vadagam, you would follow a similar process as mentioned before. Soak urad dal (split black lentils) and rice in water for a few hours, then drain the water and grind them into a smooth batter. Add spices like black pepper, cumin seeds, asafoetida, and salt to the batter, adjusting the quantities to your taste.
Once the batter is prepared, shape it into small discs or balls and let them dry under the sun until they become crispy. The drying process may take several days, depending on the weather conditions.
White Vadagams can be deep-fried or roasted before serving, just like Chilly Vadagams. They have a mild and flavorful taste, with the spices providing a pleasant aroma and subtle heat. They are commonly served as a crunchy accompaniment to rice dishes, sambar, rasam, or even enjoyed as a standalone snack.
As with any traditional recipe, variations may exist in the preparation and spices used, depending on regional preferences and family recipes.
